The squash continue to reign supreme. I now have several spaghetti squashlings, but no butternut squashlings as of yet. I was able to harvest one zucchini yesterday which I mixed with radishes, onions, peas and mushrooms into a oven-roasted vegetable medley. So tasty! So far, there are no more zucchini, but I think I see where some may eventually develop.
What I learned this week:
When taking pictures of baby squashlings, do not pull or twist very hard to reposition them or you may prematurely harvest them. I was careful, but I guess not careful enough. I thought about trying to roast that small spaghetti squashling along with my vegetable medley last night but it is still a little green. I am hoping it might turn more yellow in my kitchen window.
